Rabarberu-zemeņu pīrāgs ar ''režģi''

Ceriņu laiks, zemenes, rabarberi, rododendri - tik daudzi no labākajiem vasaras (un es nebaidos vairs teikt, ka ir jau vasara) laikiem sakrīt vienā. Ja ceriņus es varu turēt vāzē uz galda un priecāties katru dienu, tad rabarberiem un zemenēm gluži vienkārši neatliek laika. Lai vai kā, es būtu vīlusies, ja šogad nesanāktu iesaistīt rabarberus kādā no kulinārijas pasākumiem. Zemenes un rabarberi, kā zināms, ir saskanīgs duets. Aizraujošākā daļa visā pīrāga tapšanas procesā, protams, ir režģis. Jāatzīst, ka attiecībā uz pīrāga režģi es saskāros ar tehniskas dabas problēmām, tādēļ neliela instrukcija nāca tikai par labu.

Pildījums:
450g zemenes
700g rabarberi
40g kukurūzas ciete
0,5 glāzes gaiši brūnais cukurs
0.5 glāzes cukurs
1 tējk. kanēlis

1 olas dzeltenums
1. Sāk ar mīklas pagatavošanu. Sajauc kopā miltus, sāli un cukuru. Pievieno margarīnu un sviestu. Pakāpeniski iemaisa ūdeni. Mīklu kārtīgi izmīca, sadala divās daļās, katru ietin pārtikas plēvē un liek edusskapī uz vismaz 1h atdzist.

2. Uzsilda cepeškrāsni līdz 200 grādiem. Pagatavo pildījumu. Zemenes notīra un pārgriež uz pusēm. Rabarberus nomazgā, sagriež nelielos gabaliņos. Lielā bļodā sajauc kopā, pievieno brūno cukuru, kanēli, kukurūzas cieti. Kārtīgi izmaisa, lai visas sastāvdaļas sajaucas.
3. Mīklu ņem ārā no ledusskapja, ļauj sasilt līdz istabas temperatūrai un izrullē uz miltainas virsmas vienu mīklas apli 33 cm diametrā. Ievieto apli pīrāga formā (23cm diametrā), atstājot aptuveni 1cm pāri formas malai. Liek tajā sagatavoto rabarberu un zemeņu pildījumu. Izrullē otru mīklas apli, tik pat lielu. Sagriež aptuveni 14 vienāda platuma strēmelēs (skaits atkarīgs no tā, cik smalku režģi vēlas pīrāgam izveidot). Izvieto mīklas strēmeles pāri pildījumam tā, lai izveidojas režģis. Nogriež lieko mīklu un saspiež pīrāga apakšējo malu kopā ar virsējo malu, izveidojot dekoratīvus vilnīšus.
4. Pīrāga virsu nosmērē ar sakultu olas dzeltenumu un liek cepeškrāsnī. Cep 20 minūtes, tad samazina temperatūru līdz 175 grādiem un cep vēl aptuveni pusstundu, kamēr pildījums sabiezē un pīrāgs zeltaini brūns. Pirms pasniegšanas ļauj, lai pīrāgs atdziest.
